Mexican Eggs
1 carb
Ingredients:
  • 4 eggs
  • 1/4 cup heavy cream
  • desired amount of chorizo
  • 1/2 cup shredded cheese

Instructions:
Chop up chorizo and cook in a small frying pan.  While the chorizo is cooking, scramble the eggs and cream together.  Pour egg mixture into another frying pan and cook.  When eggs are at desired consistency, add cooked chorizo and shredded cheese.  Mix all ingredients together well until cheese is melted.  Another way to enjoy is wrapping the eggs in a low carb tortilla!  Yum!

Chocolate, Chocolate-Chip Pancakes
6 carbs for 4 pancakes
Ingredients:
1 egg
1/4 cup low carb chocolate milk
1/2 cup carb quick
1 tbs butter
2 tbs low carb chocolate chips
sugar free syrup


Instructions:
Ok, this is going to sound weird... But cook these pancakes in the oven.  That's kind of why they look different in the picture.  My husband says they look like slices of ham!  I just ignored him, because I was too busy chompin' down on these delicious pancakes!  But cook these in the oven because carbquik is difficult sometimes and they seemed to turn out better when cooked on a cookie sheet in the oven--Tip from my sister the "Low-Carb Guru"  Just keep an eye on them, but my estimated time they'll be done is 12-15 mins.

Waffles
Servings: 6
Net Carbs Per Serving: 2g

Ingredients:
  • 1 whole egg
  • 1/4 cup heavy cream
  • 1/4 cup water
  • 1 1/4 cups carbquik
  • 1 teaspoon vanilla extract
  • 1 tablespoon Splenda
  • 1/8 cup vegetable oil


Instructions:
-Heat Belgian or regular waffle iron; grease with cooking spray, vegetable oil or shortening.
-Beat eggs in small bowl on high speed about 3 minutes or until thick and lemon colored. Stir in cream and water.
-Beat in carbquik and Splenda on low speed until smooth, stir in vanilla. Gently fold in oil.
-Pour slightly less than cupfuls onto center of hot waffle iron. Close lid of waffle iron.
